Irish Over the Rainbow Potato Boxty 🌈 🥔

Ingredients

500 g potatoes, peeled and grated (for veg fearing Pipsters you can add more potato and take some of the veg out)

1 small onion, finely chopped

1 egg, beaten

3–4 tbsp plain flour

Salt & pepper

50 g red bell pepper, finely diced

50 g yellow bell pepper, finely diced

50 g carrot, finely grated

50 g purple cabbage, shredded

50 g broccoli, chopped small (use the Broccoli stalk to reduce waste)

Veggie oil to cook

Optional toppings:

Smoked salmon slices

Crème fraîche

Fresh herbs (we used chives as it goes well with the smoked salmon)

Serve with ketchup etc.

Method

1. Chop up the onion and pop in a big bowl.

2. Chop the vegetables finely and leave to the side

3. Peel and grate the potatoes. Place in a clean tea towel and squeeze out excess moisture (fun for Pipsters to do, but need some supervision)

4. Chop the onion, and pop in a bowl with beaten egg, flour (and we season with salt and pepper here, but feel free to do this at the end to manage salt levels)

5. Fold in the finely chopped rainbow vegetables!

6. Heat a pan with a tablespoon of veggie oil

7. Spoon a small handful of the mixture into the pan, flattening them slightly.

8. They should could for 4-5 minutes each side, or until golden and brown.

9. Repeat until all the mixture is used, or pop mixture in balls in the freezer for another day!

We served them with crème fraiche, smoked salmon and chives, but you could do a fried egg, some cheese, ketchup etc.
