Rainbow Fried Rice

  • 1 tbsp cooking oil (olive or vegetable oil)
  • 1 tsp minced garlic
  • 3 tbsp finely diced onion
  • 2 cups cooked white rice (leftover chilled rice works best)
  • 1 cup mixed vegetables (peas, sweetcorn, and diced carrots)
  • 2 large eggs

Method

  1. Sauté the Aromatics: Heat the oil in a large frying pan or wok over medium heat. Add the minced garlic and diced onion, sautéing for 1–2 minutes until fragrant and slightly softened.
  2. Add Rice and Veggies: Tip the cooked white rice and the mixed vegetables into the pan. Stir well to combine all the ingredients and cook for 2–3 minutes until heated through.
  3. Prep the Eggs: While the rice is warming, crack the two eggs into a small bowl and whisk them together thoroughly.
  4. Cook the Eggs: Push the rice mixture to the outer edges of the pan to create a well in the centre. Pour the whisked eggs directly into the clearing.
  5. Scramble and Combine: Gently stir the eggs in the centre until they begin to scramble and thicken, then fold them into the surrounding rice and vegetable mix.
  6. Finish and Serve: Continue to toss everything together for another minute until the egg is fully cooked and distributed through the rice. Divide into two bowls and serve immediately.
